This is our go-to slow cook recipe. It looks like poop, but tastes great. There is a bit of sweetness from the peaches. We haven’t had this in a long time, but we made it yesterday, and it was delicious. I know…we had our roast pork last week too. Sorry…no photos again.
-1 can sliced peaches, drained (16 oz)
-1/4 cup raisins
-1/4 cup brown sugar
-1/4 cup vinegar
-1/2 small onion
-1 T mustard (we use Dijon)
-1 pork loin roast (<3 lbs)
*Combine all ingredients (except roast) in blender
*Process until coarsely chopped
*Place roast in crock
*Pour chutney on top
*Cover and cook (low: 8 hrs, auto: 6 hrs, high: 4 hrs)
Notes:
~You can use a hand blender to blend ingredients.
~If you have time, flip the roast half way through so that top and bottom are equally tender.
We got a Hamilton Beach slow cooker from J.Fong awhile back, and this is one of the recipes from their website, although it’s been redesigned, so this particular one is not listed anymore.
