How did we even try a BUTTERNUT SQUASH SOUP?
That is a good question.
Well, my mom’s work union gives out free food to the employee every week. LAST YEAR one of the items given out around this time were butternut squashes. My parents had no idea what to do with it, so they gave it to us. We searched around and came up with this butternut squash soup recipe from allrecipes.com.
It takes some time to chop everything up but it is super easy and delicious. I am pretty sure it is a very healthy soup too. The kids love it as well.
My only suggestions for this recipe is that when you peel the butternut squash, you should chop it in half first. It is easier to get into with the peeler this way. And like I said LAST YEAR, make your life even easier by using a hand blender instead of transferring.
Oh, and this makes quite a bit of soup. I think it’s a 4-quart pot that we use?? So that would be 16 cups.

I tried butternut squash soup once but I HATED it! It was pre-made (but fresh) and I wanted to like it so bad but I just didn’t. Maybe I need to try your recipe and make it myself. Everyone talks about how good it is so I don’t know what my problem is!
I tried a boxed kind before. Totally different. I didn’t think I would like it at first but I do.
